Cauliflower Pickle

Description

A flavorful Andhra-style chutney made with sautéed cauliflower, roasted spices, garlic, and tamarind. Mildly spicy, aromatic, and perfect as a side dish for rice, dosa, or chapati.

Preparation Steps

  1. Cook the Cauliflower:
    Heat a little oil in a pan and sauté the cauliflower until soft and slightly golden. Set aside.

  2. Roast the Spices:
    In the same pan, heat oil and add mustard seeds, cumin seeds, red chilies, chana dal, urad dal, garlic, and curry leaves. Roast until they turn golden and aromatic.

  3. Grind the Spice Mix:
    Add roasted spices, tamarind, salt, and a little water to a mixer. Grind coarsely.

  4. Add Cauliflower:
    Add the sautéed cauliflower to the mixer and pulse lightly. Keep it chunky — do not grind into a smooth paste.

  5. Adjust Taste:
    Add red chili powder or salt if needed.

  6. Ingredients

    • 1 medium cauliflower (cut into small florets)

    • 2 tbsp oil

    • 1 tsp mustard seeds

    • 1 tsp cumin seeds

    • 2–3 dry red chilies

    • 1 tbsp chana dal

    • 1 tbsp urad dal

    • 3–4 garlic cloves

    • Small lemon-sized tamarind

    • Salt to taste

    • A few curry leaves

    • 1 tsp red chili powder (optional)
