Description
A flavorful Andhra-style chutney made with sautéed cauliflower, roasted spices, garlic, and tamarind. Mildly spicy, aromatic, and perfect as a side dish for rice, dosa, or chapati.
Preparation Steps

Cook the Cauliflower:
Heat a little oil in a pan and sauté the cauliflower until soft and slightly golden. Set aside. -
Roast the Spices:
In the same pan, heat oil and add mustard seeds, cumin seeds, red chilies, chana dal, urad dal, garlic, and curry leaves. Roast until they turn golden and aromatic. -
Grind the Spice Mix:
Add roasted spices, tamarind, salt, and a little water to a mixer. Grind coarsely. -
Add Cauliflower:
Add the sautéed cauliflower to the mixer and pulse lightly. Keep it chunky — do not grind into a smooth paste. -
Adjust Taste:
Add red chili powder or salt if needed. -
